Very classic wit aroma. A refreshing mildly hopped Belgian styled beer with a complex flavour of coriander, orange peel, nutmeg. The finish has taste of orange peel, spicy clove, and ginger all mixed together along with a slight malt sweetness.

Aromas of chocolate, roasted bitterness, black currants, dark fruits.Caramel, roasted, black and chocolate malts provide an explosion of coffee like flavors. The strong espresso character comes from the addition of espresso beans to the boil. There are notes of vanilla, dark fruit, cocoa and chocolate. Smooth and slightly bitter finish.

Hitachino Nest Sweet Stout Country: Japan Style: Sweet (Lacto) Stout Malts: Marris Otter, Wheat, Crystal Adjuncts: Roasted Barley, Lactose Hops: Kent Golding IBU: 15 Alcohol by Volume: 4% Format: 24 x 330ml, 30L kegs when available Availability: Seasonally Tasting Notes: Hitachino Nest Sweet Stout is one of the last, true examples of this classic beer style, which was first documented in the 1900s in England. The nutritional value of lactose, a by-product of cheese making, is widely credited in the further development of this style throughout the 20th and 21st century, in particular during and after both world wars. As milk sugars are not fermentable by beer yeast, sweet stouts are characterised by their low level of alcohol (around 3.5% ABV), rather modest carbonation, and hints of sweetness on the palate and finish. The rise of mass produced beers in the later part of the 20th century, however, caused the demise of this classic style.
Authentic milk sugar (95% of lactose is milk sugar), about 10% of total grain bill, is added to the boil -- 10 minutes into it. Kent Goldings hops are used. A fermentation period of about 10 days and a maturation time of three more weeks conclude the brewing of Hitachino Nest Sweet Stout.
Hitachino Nest Commemorative Ale Country: Japan Style: Eisbock Malts: Marris Otter, Wheat, Munich, Crystal, Chocolate Hops: Styrian Golding, Tettnang, Hallertau, Saaz IBU: 28 Alcohol by Volume: 8% Format: 24 x 330ml, 30L kegs when available Availability: Beginning of the New Year Tasting Notes: Hitachino Nest Celebration Ale is brewed in tradition of a true Eisbock where the brew is concentrated by allowing the water to freeze (but not the alcohol). It is a full bodied beer with sweet wheat flavour and beautiful dense foam. Pleasant bitterness and unique spicy aroma with Orange Peel, Coriander, Nutmeg, Cinnamon, and Vanilla Beans.
Hitachino Nest Nipponia Country: Japan Style: Traditional Ale Malts: Kaneko Golden Hops: Sorachi Ace IBU: 22 Alcohol by Volume: 6.5% Format: 12 x 550ml bottles, 30L kegs when available Availability: Rare Tasting Notes: This new “barley malt” (cross pollination between the European “Golden Melon” and the Japanese barley malt “Shikoku”) disappeared a “relatively long time ago” (about 50 years ago). A few years ago Mr.Kiuchi acquired 16 seeds from the Department of Agricultural History in Japan. He started to plant those 16 seeds {on a 2 square foot area!} about 5 years ago. After the first harvest they planted all new seeds again....and did the same the next year and the following . Finally, last year’s harvest yielded enough “Kaneko Golden Malt” to brew the first batch of “Ancient Nipponia” (along with the historic Sorachi Ace hops).
